Quick, Easy and Delicious Oyakodon

I LOVE cooking Japanese food. For any of you who follow my Instagram, you know how every now and then I have to take pics of bento boxes I make. While I still haven’t mastered the art of Sushi making, this is one of those comfort food type things that brings such a wonderful warm feeling when you eat it. It’s also really easy to make, the hardest part is really getting the rice cooking and ready. So if you’re looking for something unique to cook up for dinner tonight, I got you covered!

This recipe serves two which is perfect for you and your S/O or friend to have and given how quickly it comes together, it’s the perfect thing to make to start off your weekend! It also tastes delicious with sake, or beer.

* 1 large chicken thigh, deboned, remove the skin, cut into bite-size pieces * 1 medium-size yellow onion, thinly sliced * 2 eggs, very lightly beaten * 2 tablespoons mirin * 1 tablespoon sake (If you don’t have sake or don’t want to use it you can use Japanese cooking rice wine. The alcohol gets cooked off in this recipe, so it’s perfectly safe to serve your little ones if you want.) * 1/2 cup dashi (If you don’t have dashi, you can replace it with water and a dash of Thai fish sauce, I use the one shown below)

* 2 tablespoons soy sauce (I used Japanese soy sauce, Yamasa brand) * 1/2 teaspoon sugar * some spring onions, cut into 1″ length (I found that 1inch was pretty big, so I cut them much finer so they didn’t steal the show. * 2 bowls of cooked rice (any regular rice will do. I’ve even used jasmine, which was delicious)

1.) Assembling all your ingredients ahead of time will really make this just come together quickly.

2.) In a small frying pan, heat mirin and sake and bring to a boil. Add dashi, soya sauce and sugar, bring to a boil. Add onions, cook till soften, about 2 mins.

3.) Add chicken meat, leave to simmer for about 2 to 3 mins or until the chicken is cooked.

4.) Toss in the spring onions.

5.) Drizzle in the eggs, DO NOT STIR! Turn off the heat once the eggs are almost set. Place rice in a large serving bowl. Pour chicken and egg mixture over the rice.
