How to make Lime Coconut Shrimp and Forbidden Rice

In this episode, I'm cooking Coconut Lime Shrimp and Forbidden Rice! I'm home from work and whipping up something tasty in the kitchen. Forbidden Rice is black rice that has a hearty texture and nutty aroma. It's also supposed to be full of antioxidants and very healthy!

 


Coconut Lime Shrimp with Forbidden Rice:

Ingredients:

  • 1 1/2 cups uncooked Black Rice (also known as Forbidden Rice)

  • 1 cup unsweetened coconut milk

  • 1 tbsp finely chopped serrano pepper (Jalapeno is also a good substitute)

  • 2 tsp grated ginger

  • 8oz asparagus, cut into 1-inch pieces

  • 1lb. Shrimp peeled and deveined

  • 2 limes juiced (1/4 cup)

  • 2 green onions chopped

  • Unsweetened toasted coconut flakes or chips (optional)

  • Crushed Red Pepper Flakes (also optional)


Instructions:

  1. In a medium saucepan, mix together the black rice, 1 1/2 cups of water, the coconut milk, and 3/4 tsp of salt. Bring it to a boil and give it a stir. Reduce the heat to low and cover, allowing it to simmer for about 25 to 30 minutes or until the water has evaporated and the rice is tender. Remove it from the heat and let it stand for 10 minutes.

  2. In another pan (10-inch skillet) heat 1 tbsp vegetable oil over medium heat. Add your serrano pepper (or jalapeno), and ginger. Cook for 30 seconds until fragrant and then add your asparagus. Increase the heat to medium-high and cook, stirring frequently until the asparagus is soft. Transfer to a platter.

  3. Add a little more vegetable oil and then add shrimp and cook flipping them once for about 3-4 minutes or until cooked through.

  4. Combine the rice, with the asparagus and shrimp. Drizzle with lime juice and top with shrimp and green onions and optional red chili flakes and Coconut flakes. Serve warm and Enjoy!
