Light and Fluffy Coconut Overnight Oats

Hello everyone! Normally I’m a morning person, but sometimes it’s nice to wake up and know that breakfast is already made. Also, I’m a huge fan of coconut cream pie and I have to say I was not disappointed by these overnight oats. It’s a great way to welcome some warm weather.


 

So this recipe is pretty simple and it’s really awesome to try if you want to get some oats into your diet but you don’t like oatmeal. It’s packed with flavor and it frees up your morning! This recipe makes two servings and clocks in at 350 calories per serving which is a pretty good choice for breakfast.

1 cup Old fashioned oats

1/4 cup Protein powder

2 tbsp Sweetener of choice

1/8 tsp Salt

1/4 cup shredded coconut

1/2 tsp Coconut extract

1 cup Almond milk

1/2 cup Greek yogurt

In a small bowl, mix all of the ingredients together. Divide between 2 mason jars, or any other container that can be covered. Cover and refrigerate overnight so the oats soften and absorb the liquid. Sprinkle with Coconut and enjoy!
