My Mother’s Mini Cheesecake Recipe

Growing up, I often had to raise money to go camping and things like that and raising money in typical kid fashion means having a bake sale. My mother use to whip up these amazing mini cheesecakes and they always SOLD OUT. Seriously and that’s not even the best part. They’re crazy easy make and THEY FREEZE!!!! Why is that so cool? Because sometimes you may not want cheesecake every night that week. You can freeze one mini and that’s it, save the rest for later! So I hope these are a knockout in your home as it was in mine.

This recipe makes 12 full-size cupcakes.

2 (8oz) packages of cream cheese

* 2 eggs

* 3/4 cups sugar

* 1 tablespoon vanilla

* 1/2 tsp salt.

* 1/2 tablespoon lemon juice

* Nilla Wafers

1.) Preheat oven to 375.

2.) Put liners into a cupcake pan, and then place one Nilla waffer (flat side down) on the bottom. Growing up, this was my favorite thing to do to “help” my mom, so if you have children this is a great time to include them. I absolutely love the elegance that the gold foil cupcake liners bring to these desserts.

3.) Mix the cream cheese (softened) and eggs, vanilla, and lemon juice together with a hand mixer on low.

4.) Add in the sugar and salt to your cream cheese mixture. Mix until fairly smooth (it might still have some lumps from the cream cheese, but as long as they’re small that should be okay).

5.) Fill each muffin cup 3/4’s of the way up. No more than that because they will rise slightly while cooking and then sink back down during the cooling processes. Sprinkle a little cinnamon on top.

6.) Bake for 15 minutes. Cool completely before putting your favorite topping on top. My mother use to top them with canned cherries in syrup, but you can also top them with caramel or chocolate syrup or just have them plain.

7.) Keep them in the fridge or freeze them for later!
