Seven Layer Dip in Cups for Cinco De Mayo!!!
Cinco De Mayo is just around the corner!!!! I grew up in Tampa Florida which has a really strong Latino demographic. I had fantastic Cuban neighbors who taught me how to salsa dance, and would roast an actual pig on a spit! The longer the night went and the more drunk people got they’d dress up the head which they kept on a pike. My parents begrudgingly stayed since they weren’t really the partying types, but I LOVED IT! I was able to step into a world where the family ties were strong, and people knew how to really have a lot of fun. I still listen to Reggaeton Music when I’m feeling nostalgic. So while I don’t have any Latino heritage, I like to remember the role that those people played in some of the best memories of my childhood!
So for me, I like to celebrate Cinco De Mayo as a way to have fun like I did at that party.
One gift I got from some friends at my wedding was a homemade cookbook which contained a lot of fun recipes. In there is this recipe for 7 layer dip. Unfortunately, I am not a huge fan of olives and my husband doesn’t like tomatoes so it’s more of like a 5 layer dip at our home but feel free to add in tomatoes and olives.
I also found these adorable mini serving bowls that are the perfect appetizer size and they show off the beautiful layers you’re going to create with each ingredient. Garnish them with a few chips, but I also advise having a bowl of chips out for those who would like more.
2 cans of bean dip
1 package of guacamole
1/2 cup of mayo (I like to use the dressing)
8oz. of sour cream
1 medium onion, chopped
1 can of black olives
1 tomato, chopped
1 package of Mexican blend shredded cheese.
1.) In a large 9 x 13 baking dish for big casual parties, or in small clear appetizer bowls for a more fancy feel, layer the bean dip.
2.) Next spread the guacamole on top of the bean dip to make the second layer.
3.) In a separate bowl, mix the taco seasoning with the sour cream and mayo and then spread it over the guacamole to create the third layer.
4.) Next layer on the chopped onions.
5.) to make the fifth layer add the olives over the onions.
6.) Add the chopped tomatoes
7.) Lastly, layer on the cheese. As I said above, if you’re using little appetizer cups, garnish with a few chips, but always leave a bowl out just in case your guests would like more.
