Steak with a Strawberry Reduction

While sadly, I was not able to use the strawberries I got from the farm, the strawberry reduction was NOT a disappointment.


 


Steak with a Strawberry Wine Reduction and Green Onion and Garlic Mashed Potatoes


Ingredients:

  • 1-2 steaks (I chose beef tenderloin)

  • Salt and pepper

  • 1 cup strawberries, mashed but still chunk

  • 1/2 cup red wine (I used a merlot)

  • 1/4 cup balsamic vinegar

  • 1 tablespoon sugar

  • 1 garlic clove, minced

  • 2-3 small potatoes

  • 1-2 stalks of green onions chopped

  • 2 Tbsp of salted butter

  • garlic powder

  • a splash of milk Instructions: 1.) Prep your strawberries by washing cutting and mashing them. You can use a food processor, but be careful not to liquify them. 2.) Prep your potatoes by washing and cutting them into quarters, and put a small pot of water on to boil. 3.) Place 1 cup of the mashed strawberries in a saucepan along with the red wine, balsamic vinegar, sugar, and minced garlic. Bring this to a boil and then reduce the heat to a simmer so that it will thicken and reduce by half. 4.) Boil your potatoes until soft, and then add in your butter, as sprinkling of garlic powder to taste, a splash of milk, and some of your green onions. Mix well and keep warm. 5.) Season the steaks with salt and pepper and cook them to medium rare or desired doneness. 6.) Plate the steak and potatoes and spoon the strawberry reduction on top. Serve immediately and enjoy!
