My Mom's Mini Cheesecakes Recipe
* 2 (8oz) packages of cream cheese
* 2 eggs
* 3/4 cup of sugar
* 1 tbsp vanilla
* 1/2 tsp salt
* 1/2 tbsp lemon juice
* small bit of cinnamon for the tops
* I can of pie filling of choice (for this recipe I used cherry)
* Vanilla wafers
* Cupcake liners
Preheat the oven to 375 and line the cupcake tins with cupcake liners
Mix all ingredients with the exception of cinnamon and pie filling together.
Fill the cupcake liners 3/4ths of the way full and sprinkle a little cinnamon on top. Bake in the oven for 15 minutes. The cupcakes will puff up and sink a little in their liners, this is normal. To check for doneness, insert a toothpick into the center and if it comes out clean then the cheesecake is done.
Allow to cool 10 minutes in the tins, and 10 minutes on a wire rack.
Once cool, top with the filling of choice or leave plain. Serve or freeze.
