One thing I love during the holidays, or really any time is candied nuts. You can usually find them in these clear plastic bags and they’re EXPENSIVE! I’m talking $5 for a little bag! So as always, when I find I really enjoy something expensive, I set out to see if I could possibly make these myself at home. Then I wouldn’t have to spend so much money, AND I could have them whenever the mood struck!
Thankfully I was able to find a wonderful recipe for Cinnamon Sugar Pecans featured on the food blog Joy, Food, Sunshine, and I decided to put it to the test. The results were not only easy, but better than I expected, and can I just say that my home smelled DELICIOUS too! An added plus is that they are FREEZER FRIENDLY!!!! YASSS!!! This means that as you try to keep healthy during the holidays, you can still sprinkle these over your cranberry and blue cheese salad to give it a little extra holiday sweetness! Running at 119 calories per serving these are also not a bad mid-afternoon snack option, way better than the leftover office donuts in the lunchroom (just sayn’).

1 egg white
1 TBS pure vanilla extract
4-5 cups of pecan halves
1 cup granulated white sugar
1 tsp sea salt
2 tsp ground cinnamon

1.) Preheat the oven to 250 degrees F. Grease a large baking sheet. Don’t line the pan with foil or parchment because you’ll be stirring this as it cooks and you don’t want pieces of paper or foil in your snack.
2.) In a large mixing bowl, whip egg white and vanilla with a whisk until frothy.
3.) In a separate bowl, mix sugar, salt, and cinnamon together and set aside.
4.) Add pecans to the wet mixture 1 cup at a time, stirring to coat the nuts evenly. Depending on the size of your egg white you may use slightly more or less than 4 cups of pecans. Just make sure all nuts are well coated before adding more. I found it easier to wear gloves and mix them by hand.
5.) Once the pecans are completely coated, add in the dry ingredients and mix until the nuts are evenly coated.
6.) Spread the pecans evenly on the prepared baking sheet.
7.) Bake at 250 degrees F for 1 hour. Stir every 15 minutes.
8.) Of course, these will be really hot when they’re done so please let them cool for a few minutes after removing them from the oven.
Please follow the baking time exactly. Even if they seem done at 45 minutes do not skip the last 15 minutes of baking.
